Mmm: Pleasure Filled Pancakes

No matter how healthy you are, sometimes you want a special treat for breakfast. These pancakes allow you the pleasure of a special breakfast, without forcing you to the gym for an extra workout.

This recipes makes 8 pancakes, each pancake is about 100 calories.

Serving Suggestions:

  • sugar free syrup
  • fruit
  • peanut butter
  • jam

Add blueberries, carob chips, or apple chunks to batter to make this recipe even yummier.

The Process

Preheat skillet over medium/low heat, spray with 0-Calorie cooking spray.

Mix flour, baking soda, and sugar in medium bowl, set aside.

Beat together milk, eggs, and vanilla in another bowl. Fold mixture into dry ingredients, being careful not to overmix it. Then, stir in cinnamont.

Using a 1/3 cup measuring cup, pour pancakes onto skillet. Cook until both sides are golden.

The Ingredients

  • 1-1/4 Cups Whole Wheat Flour
  • 1 Teaspoon Baking Soda
  • 4 Teaspoons Raw Sugar
  • 1 Cup Skim Milk
  • 1/2 Cup Egg Substitue (like Eggbeaters)
  • 1 Tablespoon Vanilla Extract
  • 2 Tablespoons Ground Cinnamon

Remember that the nutritional information will vary depending on the ingredients you use. If you use real eggs instead of the substitue, or plain flour instead of whole what, the values will be different!

Another suggestion is to use a replacement sweetener instead of sugar. I, personally don't use them, so my recipes don't contain them--but it is an option to either cut calories, or make something sweeter without adding calories.

I made these, and they needed a few alterations: Against Splenda guidelines, I put 7 packets in, not 2. I mixed and stirred all the ingredients together extra much, otherwise the batter was too thick. You only need 1/4 cup per pancake, 1/3 is too much. With blueberries added, 1 tbsp was plenty of cinnamon. Overall, they were pretty darn good, and I feel spoiled!
